Amaretto Chocolate Mousse

Makes 8 servings at 127 calories each.

Tip: If calorie counting isn't important, use whipping cream rather than milk.

Ingredients
1 envelope unflavored gelatin
1 1/2 cups skim milk
2 separated eggs plus two extra egg whites
1/4 cup of sugar
1/3 cup of Dutch process cocoa (or any good cocoa)
1 tablespoons of Amaretto
1/3 cup of sugar
Strawberries

Recipe
Using a saucepan, mix together the gelatin and 1/2 cup of the skim milk (or whipping cream). Stir and leave it for a minute so the gelatin can soften. Place the saucepan over medium heat and stir for another minute or until the gelatin dissolves.
Combine the rest of the skim milk (or whipping cream) with the two egg yolks and beat. Add this mixture to the ingredients in the sauce pan. Also add 1/4 cup of sugar and the cocoa then stir.

Stirring constantly, cook this over medium heat until thickened. This takes about eight minutes. Remove from heat and stir in the Amaretto. Refrigerate for about twenty minutes.

Bring the egg whites to room temperature then beat until foamy, using a good electric mixer. Add the remaining 1/3 cup of sugar one tablespoon at a time. Beat until you have stiff peaks. Slowly add the chilled chocolate mixture to the beaten egg whites. Fold this in gently.

Carefully spoon the mousse into individual dessert dishes, or into a 1 1/2 quart serving bowl. Chill the Amaretto Chocolate Mousse Recipe for two hours or more. Garnish with halved or sliced strawberries. You can also add chocolate shavings if you desire.

Ok......this is my first time to even try to do a blog! I think I have alot to say....LOL! What prompted me to do this blog is LIFE.....It is so true about the above statement. Each day is like trying a new piece of candy in a box of chocolates. Each one is different. They can be sweet, sour, unusual or refreshing. We don't know what it is until we bite into it! Like life, it is a total surprise.

And one day, life bit me in the butt! I came down with cancer. I say it that way, because I sure did take plenty of medicine to get rid of it. But like the saying, "once an alcoholic, always an alcoholic" the same is true for cancer. You are always a cancer patient.

Originally, when I found out I had cancer, I thought life had dealt me a really bad hand. And, I blamed God for giving me cancer! What a joke! God no more gave me cancer than life and I were in a card game.

I finally came to the realization that life was wonderful! That each day was truly a blessing from God, and it was up to me as to how I wanted to experience it!

So.........I have decided to keep my eyes open to the world, look around me, and just talk about what I see, or what I think, or how I feel. And while I might just be talking to myself, that's ok too! I can promise you, chemo brain is a real thing. So, if I forget what I did today, then hey.......I can just go back and read it in my blog! LOL!

Also, I am going to periodically put scrumptious chocolate recipes on my site! Why? It's CHOCOLATE, SO YOU HAVE TO ASK?

Behind every cloud.................

They say........................"Behind every cloud, there is a silver lining." Metaphorically, I've known that to be true. But I've always wondered why "they" said that. Had "they" actually seen it?

Well after almost 50 years, I finally saw one! Mine came while I was guiltily sitting at Sonic ordering a chocolate malt, after I had just downed Mexican food at a local Mexican food restaurant. Actually, as were were pulling into Sonic, I caught a glimpse, but it wasn't until I had placed that guilt ridden order did my mind grasp what I had truly witnessed. I immediately jumped out of the car and snapped this picture.

I then started thinking...............hmmmm.......what could I write about this silver lining on my blog, and the "silver linings"of the world? I could go on and on about how when "dark" times occur in our life, we could take them and really look at them and learn valuable lessons and yada, yada, yada, but then I thought..................... "Oh heck! Why spoil the beauty of this wonder? Let it's existence and mystery speak for itself!!"

Now on to something else........................... Well I worked two days on my Grand Munchkin Jordan's Princess Castle Cake. It was not an easy task! And the cakes wound up weighing 24 lbs! In my mind's eye, I was going to create this beautiful pink Cinderella Castle and all would be glorious. I just happened to forget that the Texas Gulf Coast humidity, complete with 99-100 degree temperatures are "Hell on Earth"!!! This was my finished product. And before I

could even snap the

pictures, it started to melt!

And by the time we got to the park where the party was, the spires and turrets started to topple. luckily, in the vision of a a6 year old, it was a grand castle. Unfortunately, the minute we got there, the candles had to go on, Happy Birthday had to be sung and the demolition of the cake

had to be commenced.

At least it tasted good and the party was a success. (What was that I was saying about silver linings? LOL!)

Jordan had a really fun time, got lots of presents and played with her friends. Grown-ups got to

chat and catch up with friends and family and all was happy. Then Grammy and Paw-Paw headed home, passed out from heat exposure, and thanked God for air conditioning!

So again, I say Happy Birthday to Princess Jordan, may your life be filled with Pink Princess Castles and Silver Linings!
